Sencha is a type of green tea produced in Japan, the leaves are heated with steam to stop oxidation of the leaves. Genmaicha is a tea obtained by mixing sencha with fried rice. Although there are different ratios, the most popular is 1:1 of roasted rice to tea leaves. Fewer leaves are needed for brewing than regular tea, so genmaicha contains less caffeine compared to senchi or other green tea.
