Taiwan Oolong
Taiwanese oolong is a type of semi-fermented tea grown on the island of Taiwan. It originated in the Chinese province of Fujian, from where the tea bushes were brought. Taiwanese oolongs are renowned for their high quality and variety of flavours and aromas, ranging from sweet and floral to honey and fruity. Rich in antioxidants, they promote metabolism and help maintain cardiovascular health.
How to brew:
Any utensils are suitable for brewing Taiwanese oolong tea — porcelain gaiwan, clay teapot, or glass.
1. Place 5 grams of tea per 100 ml of water in a well-heated utensil.
2. The first pour is technical, to rinse the tea.
3. Pour water at 85-95°C over the tea, wait 10 seconds, then pour the infusion into a chahai.
