Pink matcha is a powder made from the freeze-dried pulp of the tropical pitahaya (dragon fruit).
The production technology of pink matcha is different from that of its green and blue varieties. Unlike tea leaves and flowers, pitahaya pulp is not dried, but freeze-dried: it is frozen at a very low temperature, then dried in special vacuum dryers, removing up to 90% of moisture, and then ground into powder. It is thanks to this technology that it is essential to store pink matcha in a carefully closed vacuum bag: it willingly ‘returns’ the lost moisture and forms rather dense lumps, which are difficult to dissolve in liquid.
Pink matcha has a light sweetish fruity aroma similar to yoghurt and a pleasant, sweet with a slight sour taste.
