Ivan-chai 'Forest' is a fermented tea made from the narrow-leaved Ivan-chai (scientific name Chamaenerion angustifolium). It is known for its beneficial properties, such as reducing anxiety, improving metabolism, helping with colds, and its anti-inflammatory and soothing properties.
Ivan-chai is brewed using dried leaves, pouring hot water (about 80-90°C) over them and letting it steep for 5-15 minutes. The proportions are usually 1-2 teaspoons per 200-250 ml of water, but may vary depending on the desired strength. To bring out the best flavour and aroma, the teapot can be rinsed with boiling water beforehand and wrapped in a towel during steeping.
