‘Red Water Oolong’ is a special variety of Taiwanese oolong with a degree of fermentation similar to red tea. In red water oolongs, the fermentation of the raw materials is carried out to completion. As a result, the tea combines the subtlety and elegance of oolongs with some of the warmth and flavour profile of red teas. This particular example is made from the Xi Ji Chun variety.
